Bulk Agave Syrup and Retail-Ready Bottled Agave Nectar
Bluava® Agave Syrup (Nectar) is sourced from the Blue Agave plant, Tequilana Weber, through physical extraction, hydrolysis, and purification of its natural fructans. This premium sweetener is 1.5 times sweeter than table sugar and is certified Organic, Kosher, Halal, Non-GMO, gluten-free, and vegan. It’s widely used as a low-glycemic, low-calorie sweetener in various foods and is commonly found on retail shelves. The syrup is grown, harvested, produced, and packaged with the highest certifications, ensuring the authenticity and quality of the product.
What is Agave Nectar:
The agave plant, traditionally cultivated in the hilly, semi-arid volcanic soils of Mexico, is a succulent related to the lily, though it resembles a cactus or yucca. Its fleshy leaves surround a pineapple-shaped heart, or “pina,” which contains sweet, sticky juice called aguamiel, or “honey water.” Ancient Mexicans regarded the plant as sacred, believing its nectar purified body and soul. The Tierra Group exclusively uses the Blue Agave Tequilana Weber to produce its premium agave products.
Raw Agave Syrup Production:
After about 8 years, the spiky leaves of the Agave plant are removed to reveal the “pina,” a core weighing around 100 pounds. Agave syrup is produced by extracting, filtering, and heating the sap at a low temperature (under 118°F) to break down inulin into a high-fructose liquid. The syrup varies in color and flavor based on the heating process, with darker syrups being less filtered and having a stronger taste.
Agave Properties:
Agave syrup is a versatile, low-glycemic sweetener, making it a healthier alternative to refined sugars. It is suitable for weight control, blood sugar management, and vegan diets. Agave syrup is about 40% sweeter than granulated sugar, allowing for reduced usage in recipes. Unlike artificial sweeteners, it retains the functional properties of sugar, such as browning and moisture retention, making it an ideal substitute for both liquid and granulated sugars.
Sweetening Benefits of Agave Syrup:
When choosing sweeteners, it’s important to consider their properties, not just calorie content but also sweetness levels, flavor, and glycemic index. Here’s how Bluava® organic agave syrup compares:
- Agave vs. Corn Syrup: Agave syrup is over twice as sweet as corn syrup and has less than half its glycemic response.
- Agave vs. Honey: Agave has a neutral flavor, lower glycemic index, and is vegan-friendly, unlike honey.
- Agave vs. Brown Rice Syrup: Agave is nearly three times sweeter and offers better moisture retention.
- Agave vs. Maple Syrup: Agave has a lower glycemic index and no aftertaste, making it a more cost-effective option.
Sweetener Substitution Suggestions:
- Replace honey with an equal amount of agave syrup.
- Replace maple syrup with an equal amount of agave syrup.
- Substitute brown rice syrup with half the amount of agave syrup and adjust other liquids accordingly.
- Replace light corn syrup similarly to brown rice syrup.
- For granulated sugars (table, Demerara, Turbinado, evaporated cane, or organic sugars), use 2/3 of the volume as agave syrup and reduce other liquids by 1/3.
- For brown sugars, use 2/3 of the volume as agave syrup and reduce other liquids by ¼.
- When using agave syrup in baking, lower the oven temperature by 25°F and increase baking time to prevent over-browning.

Facts About Our Syrups
What is Agave Syrup?
Agave syrup is an all natural sweetener made from the agave plant. Our Bluava syrup is made from the higher quality blue agave plant Tequilana Weber. These blue agave plants are harvested by hand, their spiky leaves cut from the heart or ‘pina’ which is where the syrup actually comes from. These pinas are then crushed to extract the juice; this juice is then filtered and heated in various stages to create the agave syrup.
Quality Standards
Raising the bar on our standards our products have undergone glycemic index testing at GI Labs. Tierra also has instituted monthly testing of random lots through Eurofins Scientific as an added value to our customers. Eurofins is the only private testing facility in the United States using oligosaccharide testing for the detection of other sugars, an indication of adulterated product.
Light vs Dark
All pure agave syrup will have a slightly smoky aftertaste. However the lighter the product the less noticeable this will be which is why the light colored agave syrup is used in various applications such as beverages and salad dressings. The darker colored agave syrup will have a more prominent smoky flavor and is mostly used in the baking industry.
Syrup vs Sugar
Agave syrup is twice as sweet as sugar and has a much lower GI. It is for those reasons that agave syrup is considered a healthier sweetener compared to other sweeteners such as table sugar and high fructose corn syrup.
Is Agave Vegan?
Yes, agave syrup is obtained from the Blue Agave plant Tequilana Weber by physical extraction, hydrolysis and purifications of naturally occurring fructans in the agave sap. No animal or animal by products are used in the production process.

This farmer owned factory is the first of its kind to plant, harvest, produce and package under one roof. Our Factory Capabilities
The production of our agave products comes from over 50 years’ of experience in the planting, harvesting and industrialization of the blue agave, tequilana weber. In 2007, our co-op of growers and entrepreneurs embarked on building the largest state of art facility in Mexico, producing the highest quality blue agave products.
Our 100% vertically integrated farmer owned factory adheres to fair trade principals while being socially responsible to the land and its people. Confirming our commitment to the environment has led us to develop ways to use our natural resources. Currently we use solar power, re- filtrated water for our production for the green spaces around our factory and the spent agave piña waste to fuel the factory using our bio-mass burner. Planting, harvesting, production & packaging are all done under one roof with the highest certifications in the marketplace today. A growing number of customers and consumers are becoming more interested in how the products they purchase and consume are being grown, processed and marketed.
