Summer is just around the corner, take it to another level with this savory marinate for one of our vegan favorite dishes, Veggie Kabobs. Bluava®organic agave nectar will help make this one of your grilling favorites.
Summer Veggie Kabobs
Marinade
3 tbsp Olive Oil
2 tsp Bluava®organic agave nectar (light)
1 ½ tsp. chili powder
1-2 cloves of garlic (minced)
1 tsp salt
1/8 tsp ground pepper
3 tbsp lemon juice
2 tbsp white wine vinegar
2 tbsp chopped cilantro
Kebabs
Use veggies of your choice.
Button Mushrooms
Peppers (Red, green and yellow)
Red Onion
Zucchini
Cherry tomatoes
Squash
Directions
- Use wooden sticks that have been soaked in water 30 minutes (so they don’t burn on grill).
- Whisk marinade ingredients together and set aside.
- Cut veggies into 1 ½ inch cubes.
- Thread veggies onto skewers and place on a hot oiled grill. Brush with marinade and close lid. Turn once after about 4/5 minutes and brush again with marinade cooking an additional 3 minutes with grill top open until vegetables have are browned and tomatoes have begun to shrivel.
- Drizzle with more marinade and serve the remained of marinade on the side, along with brown rice or quinoa.
