Veggie Kabobs - The Tierra Group

Summer is just around the corner, take it to another level with this savory marinate for one of our vegan favorite dishes, Veggie Kabobs.  Bluava®organic agave nectar will help make this one of your grilling favorites.

Summer Veggie Kabobs

3 tbsp Olive Oil
2 tsp Bluava®organic agave nectar (light)
1 ½ tsp. chili powder
1-2 cloves of garlic (minced)
1 tsp salt
1/8 tsp ground pepper
3 tbsp lemon juice
2 tbsp white wine vinegar
2 tbsp chopped cilantro

Kebabs

Use veggies of your choice.
Button Mushrooms
Peppers (Red, green and yellow)
Red Onion
Zucchini
Cherry tomatoes
Squash

Directions

  1. Use wooden sticks that have been soaked in water 30 minutes (so they don’t burn on grill).
  2. Whisk marinade ingredients together and set aside.
  3. Cut veggies into 1 ½ inch cubes.
  4. Thread veggies onto skewers and place on a hot oiled grill. Brush with marinade and close lid.  Turn once after about 4/5 minutes and brush again with marinade cooking an additional 3 minutes with grill top open until vegetables have are browned and tomatoes have begun to shrivel.
  5. Drizzle with more marinade and serve the remained of marinade on the side, along with brown rice or quinoa.
